中文摘要: 20世纪50-60年代,代食品运动在一定程度上推动了食品科技的发展,但也存在明显的问题。当时以中国科学院为代表的国家科研力量开展多种代食品的开发、利用和推广,其中以微藻中的小球藻、栅藻和扁藻的相关工作最具代表性。本文回顾微藻的科研与生产概况,分析食品科技发展中存在的基础研究不足、食品工程水平低、土法加工安全性差等问题及其时代局限性。
英文摘要: In the 1950sand 1960s,the alternative foods movement promoted the development of food technology to a certain extent,but there were also obvious problems.During that period,the Chinese Academy of Sciences,a representative scientific institution,carried out the development,utilization and promotion of a variety of alternative foods,among which,the investigation and application of Chlorella,Scenedesmus and Platymonas of the microalgae was the most representative.This article reviews the overview of the research and production of microalgae,and analyzes the limitations in the development of food science and technology at that time,such as insufficient basic research,low level of food engineering,and poor safety of local manufacturing.
