In the 1950sand 1960s,the alternative foods movement promoted the development of food technology to a certain extent,but there were also obvious problems.During that period,the Chinese Academy of Sciences,a representative scientific institution,carried out the development,utilization and promotion of a variety of alternative foods,among which,the investigation and application of Chlorella,Scenedesmus and Platymonas of the microalgae was the most representative.This article reviews the overview of the research and production of microalgae,and analyzes the limitations in the development of food science and technology at that time,such as insufficient basic research,low level of food engineering,and poor safety of local manufacturing. |
